Gypsum (calcium sulphate) Mineral salt used to increase wort's acidity (decreasing ph) and adjust salts content in the water.
Use 1 teaspoon per gallon to increase hardness of water by 246ppm Ca++ and 588ppm SO4--.
Add prior to boil.
